International Training Programme on Milk Processing

Introduction

A well-organised milk collection, processing and marketing system is essential to cope with the rapidly increasing demand for milk and milk products in many (developing) countries.

For whom it is intended

  • Middle level and managerial staff of small- to medium-scale milk processing enterprises; these enterprises may be private companies, government owned companies or co-operatives.

  • Staff of training institutes (food processing).

  • Staff of advisory services dealing with the development of small-scale dairy industries; these services may be rendered by the government, dairy co-operatives, private consultants or banks.

  • Future staff of new dairy enterprises.

Your final destination

At the end of the course, the participants are equipped with new attitudes, knowledge and skills which will enable them to enhance their work performance.

Content of training/course

The training programme consists of three modules organised within a six-week period. This setup allows for individual packages tailored to the requirements of the participants.
Each module can be attended as ‘stand alone’. The total programme is designed to provide a basic training in all aspects of running and managing a modern, medium sized dairy plant.

  • Module MP01: Milk Procurement
Composition and characteristics of milk, milking systems and storage of milk on the farm, milk collection (transport, collecting centres, milk receipt at the plant), storage of raw milk at the plant, quality control tests of raw milk, payment of raw milk, cleaning and disinfecting. One day will be spent on the production of yoghurt.

  • Module MP02: Production of dairy products
Production of common dairy products: liquid milk products like pasteurised milk, yoghurts, whey drinks, yoghurt drinks, butter and cheese. The programme may be adapted according to the interests of the participants.
Note: Not included are evaporated milk, sweetened
condensed milk and milk powders. A programme
for the production of these products can be arranged
    on request.

  • Module MP03; Business administration, marketing and quality management
Financial administration of a dairy plant, the development of a marketing plan and different kind of quality management systems. Included are some practical exercises in determining the hygienic quality of products and the hygienic condition of the processing plant. The quality management system, according to HACCP standards, of the PTC+ dairy plant will be used as a case study.
